Easy to make Scottish Stewed Sausage Recipe

Another one for the comfort food category, this time a Scottish Stewed Sausage Recipe.  This is one of those easy to put together, leave it to cook, fill up a plate and sit on the couch.  A big plate of a winter warmer, or for those days you need something that reminds you of childhood.

If Mince and Tatties or a Steak Pie is too much hassle to make, then Stewed Sausage is the recipe for you.  Put it all together in the one pot, leave it to cook and then serve simply with potatoes either boiled or mash.

We used Powters Scrumpy Pig sausages, with its sweet zesty apple and cider is enhanced with sage, marjoram, nutmeg and pepper.

What is Stewed Sausage?

Stewed sausage is almost like a sausage casserole.  Sausages cooked in a stock with carrots and onions.

What other ingredients can be added to Stewed Sausage?

Beans such as kidney, cannelini or haricot beans can be added, other vegetables such as peas or mushrooms can be added,  as well a diced potatoes.

What can I serve with Stewed Sausage?

Boiled or mash potatoes are great.  Especially mashed potatoes to soak up that sauce.   Peas, cabbage or whatever your favourite vegetable goes well.

How to store Stewed Sausage?

Leave to cool and store in an airtight container.  In theory, leftovers should keep for three days, however these always disappear when made!    Stewed Sausage is easy freezed and will keep for up to 4 months, defrost thoroughly before reheating.

How to reheat Stewed Sausage

Stewed sausage can be reheated in a pan, sometimes a little extra liquid is needed. Reheating in the microwave is easy as well,  just make sure the sausage is hot all the way through.

Ingredients

6 sausages
2 onions, sliced
2 carrots, sliced
2 tbsp cornflour
1 tsp mixed herbs
1 Oxo cube dissolved in 500ml hot water
1 tbsp Worcestershire sauce

Method

Add some oil to a pan on a medium heat.
Add  the onions, carrots and mixed herbs and cook until softened.
Add the sausages, Oxo stock and Worcestershire sauce to the pan.
Simmer for around 30 mins.
Mix the cornflour with some water to make a smooth slurry, then mix into the gravy.  Add the cornflour mix slowly and stir to avoid lumps.
Cook the mixture until it reaches your desired consistency.
Serve and enjoy!
