Orange Coconut Bites Recipe

Perfect afternoon treat

How to make Orange coconut bites

Makes approximately 12 – 16 pieces

Ingredients

1 large orange
Egg white from a medium-sized egg
2 tablespoon icing sugar
1 cup dessicated coconut
Drops of vanilla essence

Method

• Prepare baking tray with non-stick parchment paper – make sure it is crease-free.
• Separate egg (using egg white).
• Place egg white into a medium-sized glass bowl (if possible). Beat until egg white forms peaks (either using a fork or electric whisk).
• Using a citrus fruit zester or traditional grater – remove rind from orange.
• Sift icing sugar into egg whites.
• Add orange rind, dessicated coconut and vanilla essence. Gently combine all ingredients.
• Place small heaped spoonfuls of mixture onto the baking tray (evenly spaced apart). Slightly flatten to a small bite size.
• Bake in a slow heat oven for about 12-15 minutes or until slightly brown in colour (worth keeping a eye on).
• Gently remove from baking paper once slightly cool.

Ideal to serve with coffee or as an accompaniment to a fruit dessert.
