Watermelon Soup with Fresh Mint recipe

Quench your thirst and re-hydrate with this refreshing watermelon soup.  We love watermelon and with the heat lately, we were looking for other ways to enjoy some watermelon.  Eat as a soup, or drink on the go as a smoothie style refresher.

Ingredients

1 average sized seedless watermelon

2 tablespoons of lemon juice

2 tablespoons of lime juice

1 tablespoon of fresh mint, chopped

1 tablespoon of honey

¼ teaspoon of ginger

Directions

Add watermelon, lemon juice, lime juice, chopped mint, honey and ginger into a blender or food processor.

Blitz until smooth.

Cover and chill until cold.

Once chilled serve in bowls or glasses and garnish with mint.
