A winter warmer – Oatmeal Soup
Just back from the island of Arran at the weekend, and my Arran Fayre book fell out of the bookcase – so it was a sign to have a look and make something from it. Having a bundle of onions ready to walk out the door, this Scottish Oatmeal Soup Recipe was an apt meal to make.
It’s a velvety, warming oatmeal soup made from simple ingredients which could be pimped up in any way by the addition of peas, carrots, chicken, ham… the list is endless. Think of it like a Scottish risotto or congee.

Scottish Oatmeal Soup Recipe
Ingredients
140g oatmeal
450g onions, chopped
60g butter
1500ml chicken Stock
500ml milk
Salt and pepper
Method
Add the chopped onions to a pot and fry in the butter until the onions are transparent.
Add the oatmeal.
Add the stock and bring to the boil.
Simmer, gently for 20 mins, then add the milk and mix thoroughly.
Blend with a stick blender, or conventional blender until smooth.
Season to taste.
