Scottish Oatmeal Soup Recipe
A simple to make soup which is velvety and warming, perfect for a cold Winter day.
- 140 g oatmeal
- 450 g onions chopped
- 60 g butter
- 1500 ml chicken Stock
- 500 ml milk
- Salt and pepper
Add the chopped onions to a pot and fry in the butter until the onions are transparent.
Add the oatmeal.
Add the stock and bring to the boil.
Simmer, gently for 20 mins, then add the milk and mix thoroughly.
Blend with a stick blender, or conventional blender until smooth.
Season to taste.
