Michelin Award-Winning Bartender Takes Over Nauticus in Edinburgh
A Michelin-recognised bartender is heading to Leith for a one-night-only takeover, bringing a taste of Glasgow’s award-winning cocktail scene to Edinburgh.
On Monday 4 May, Nauticus on Duke Street will welcome Ally Shaw, Head of Drinks at Scoop Restaurant Group and the talent behind the drinks programme at Sebb’s in Glasgow.

Shaw picked up the Exceptional Cocktails Award at the Michelin Guide ceremony earlier this year for his work at Sebb’s basement bar.
Glasgow Cocktails Come to Leith
The one-night-only collaboration brings together Sebb’s, Nauticus and The Glasgow Distillery Company for an afternoon-to-late celebration of Scottish drinks.
Guests can expect whisky highballs and cocktails made using Glasgow Distillery spirits, alongside snacks from Nauticus sister venue Dogstar, including house focaccia, pickles and dips.
There will also be live music, making this a relaxed but lively Monday night takeover in one of Edinburgh’s bars.

“We’re really looking forward to bringing a bit of what we do at Sebb’s over to Edinburgh for the night. It’s a great chance to work alongside the Nauticus team and showcase some of the drinks we’ve been developing, as well as using brilliant spirits from Glasgow Distillery.
“For us, it’s always about balance and making drinks that people genuinely want to come back for. Being recognised by Michelin earlier this year was a huge moment, but the focus stays the same: keep pushing things forward and make sure people have a great time when they’re at the bar.”
Nauticus: One of Leith’s Best Cocktail Bars
Located on Duke Street in Leith, Nauticus has become known for its mix of neighbourhood pub atmosphere and creative cocktails. The bar champions Scottish producers, with much of its drinks list built around spirits, beers and ingredients from across Scotland.
The venue also takes inspiration from Leith’s maritime history, with menus shaped around themes such as the spice trade, gin, sherry and whisky.
Nauticus is part of a growing Leith hospitality group alongside Dogstar, which opened in 2025 and has already earned a place in the Michelin Guide.
