Herb oils and butter
Good quality butter can make a huge difference to the flavour of your food. Herb butters are simple to make and easy to store. When you need to liven up a mid-week meal or add another flavour to a plate of vegetables or plain fish – herb butters are easily available. A bunch of fresh parsley (approximately 100g)
100g good quality butter
Dash of freshly squeezed lemon juice
Wash and finely chop the parsley
Combine all ingredients in a blender (or you can use a mortar and pestle) until smooth.
Keep in fridge or shape into a sausage style roll, wrap in cling film and freeze until required.
A delightful addition to your grilled fish or roasted veggies
You can use many types of herbs for your butter – sage, dill, oregano, watercress, tarragon etc.
