Summer in a glass with this Elderflower Cordial Recipe

 

Refreshing and summery, Elderflower cordial is delicious drizzled onto strawberries, diluted with sparkling water or added to white wine (rather than throwing out a bottle you aren’t enjoying add some cordial to make it palatable).

Here’s a guide to identifying and using elderflower.

Here’s an easy recipe for Elderflower Cordial. We have used citric acid, found naturally in lemons, it is added here as a preservative so homemade elderflower cordial will last longer with the addition of citric acid.  However, if you can’t get any, don’t fear.  You’ll just have to drink the cordial quicker!  We bought our citric acid from a local Asian food shop.  Citric Acid can also be found online.

Ingredients

15 large elderflower heads
2 lemons – sliced
50 g citric acid
2.5 litres water
1 kg sugar

Method

Check elderflowers for insects and dirt, don’t wash them – just give them a little shake.
Add elderflowers, lemon slices and citric acid to the water in a large pan.
Boil the mixture, stirring occasionally.
Add the sugar.
Once the sugar has dissolved, remove from heat, cover and let infuse overnight.
Strain the liquid through a muslin cloth.
Sterilise some glass bottles, and the funnel as well. (don’t forget about the lids!) with boiling water. If you are going to use a funnel or any other pouring aid, sterilise that, too.
Bottle the tasty cordial

Keep in a cool, dark place. Store in the fridge once opened.

    In your recipe for Elderberry Cordial, you have us adding sugar at two different times. I feel this must be an error as I’m guessing you should only be adding it once, but want to make sure. In other words, you have us adding it BEFORE you boil the flowers, lemons and citric acid, and also AFTER removing it from the heat and straining it.
