A Pantheon of pizza in Leith
Pizza it’s everywhere just now. A few years back, it was burgers, and now we have all sorts of pizzas, from the wet Napoli style to the crispy and rectangular Roman style. What started as a pop-up during the Edinburgh festival is now a settled piece of the Leith foodie scene. It was a dull day and moving towards a cold night, perfect for discovering some toasty, freshly made pizza.
Pala can be found on Jane Street, which is a side street off of Leith Walk – just along the road you will find Campervan Brewery and Newbarns Brewery. Handy.

This is a collaboration with Pizza Cherf Alessio Dosseno and Twelve Triangles, a way of utilising their prep-kitchen in a tasty way.

Inside, you will find Alessio beavering away, making fresh pizza ready to be purchased by the slice, alongside a fridge with Italian soft drinks such as Crodino, and pots of Tiramisu.

Here was the menu when we visited, held by my glamorous assistant.

potato, garlic and taleggio. Alongside the margherita, this was one of our favourites. Potato on pizza is not to be missed.

as well as squash, nduja and sage. We would recommend visiting with an empty belly, just so you can try all the slices.
Slices can be heated up in the super hot oven to eat there and then, or you can take away and re-heat at home. We tried both ways, and the pizza was just as tasty when re-heated at home.

Crispy, chewy and flavoursome pizza, just leave some space for the tiramisu…you will love it. Thick and creamy, you might have to get a pot each.
