Perched above the wild Atlantic at Scourie Beach, Crofter’s Kitchen has launched what might just be the most Scottish dish of 2026… and yes, it involves Irn-Bru!

A fresh take on Scottish seafood
Forget everything you know about prawn cocktail. This is Highland seafood with a twist. At Crofter’s Kitchen, Head Chef Grant Mercer is championing local produce with bold, modern flavours. The headline dish is a Scottish prawn and crayfish roll topped with a house-made Irn-Bru hot sauce.
Sweet, fiery and packed with nostalgic flavour, the sauce transforms freshly landed seafood into something unique
Alongside it, there’s also a crab pancake worth pulling over for. Made with hand-picked crab from nearby Kylesku, it’s paired with apple, chilli, coriander and lime for a fresh, zingy hit.

What makes this spot even more special is just how local everything is. Lobsters come from a neighbour just minutes away. Crab is landed in nearby Kylesku. Scallops are hand-dived offshore, sometimes visible from the croft

Big plans for summer 2026
Crofter’s Kitchen isn’t stopping there.
This summer will see the launch of a new container restaurant right by the beach, allowing the team to serve their seafood all year round. Expect the same local sourcing, bold flavours, and those unbeatable views, just with a bit more shelter from the Highland weather!
