Luxurious chocolate-coated candied orange slices recipe
A bar of 100 per cent chocolate from Iain Burnett Highland Chocolatier was the starting point for this chocolate-coated candied orange slices recipe. This bar contains no sugar or milk so it’s technically not chocolate! However we wanted something that would showcase the flavour and balance out that coco bitterness. These chocolate-coated candied orange slices are a delicious treat and great for gifting.

Chocolate-coated candied orange slices Recipe
Ingredients
2 oranges, sliced around 1/4 inch thick
500ml water
400g sugar
1 bar of dark chocolate
Blackthorn Sea Salt
Method
Wash your oranges and slice them into rounds about 1/4 inch thick. Remove any seeds which may be there.
Fill a pot with the water and bring to the boil.
Once boiling, add the orange slices and cook for a couple of minutes. Remove the orange slices and leave to side.
Add the sugar to the water and bring back to a boil.
Stir gently until the sugar has dissolved.
Add in the orange slices. Make sure they are submerged in the syrup.
Using a thermometer, bring the syrup up to 120C, stirring occasionally.
Then bring the sugar syrup up to 150C, still stirring occasionally. This can take about 20-30 mins.
Once the syrup reaches 150C, remove the orange slices and place them onto parchment paper or a silicon mat.
Leave to cool completely. I left them overnight
Melt the chocolate in a double boiler or in the microwave.
Dip each slice into the melted chocolate, then sprinkle with some Blackthorn salt and leave to set.
If stored properly in an airtight container, the orange slices can last for a month
