A new outdoor dining experience has arrived on Scotland’s famous North Coast 500 route, as five-star Links House at Royal Dornoch launches Tìr, a seasonal wood-fired dining concept celebrating fire, flavour and the great Highland outdoors.

Named after the Scottish Gaelic word for land and earth, Tìr is the latest culinary offering from Links House, bringing guests together around an open flame for relaxed alfresco dining overlooking the stunning Dornoch coastline.

Created by Head Chef Theo Creton, the menu focuses on simple ingredients cooked over wood fire, with dishes designed for sharing and enjoying outdoors during the warmer months.

Guests can choose from a selection of flame-grilled kebabs and skewers, including charred chicken thigh kebab, prawn skewers with mango pickle dressing, lamb kebab served with burnt aubergine yoghurt, and a celeriac kebab finished with saffron dressing. Each dish is accompanied by sumac onions, pickles, roasted red peppers, bulgur wheat salad and warm flatbread.

Highlights include herby wood-fired chicken legs served with preserved lemon yoghurt and flatbread, alongside roasted bavette steak with green chilli dressing.

A range of side dishes has also been created to complement the menu, including charcoal-roasted potatoes, seasonal salads and vibrant pickles.

More than just a dining experience, Tìr aims to capture the atmosphere of a Highland summer. Guests can relax outdoors with a selection of spritzes, local beers, chilled wines and alcohol-free drinks while enjoying views across the Dornoch coast.

Tìr will operate on selected dates throughout the summer, weather permitting, making the most of Scotland’s long summer evenings.

Located just an hour north of Inverness, Links House at Royal Dornoch is home to the UK’s most northerly Michelin Key and was recently named among the UK’s top 50 boutique hotels. Its fine dining restaurant, MARA, holds two AA Rosettes for culinary excellence.
