Highland Boundary Wild Distillery Launches Botanical Syrup Collection Made from Hand-Foraged Scottish Flora
Highland Boundary has launched five new wild botanical syrups crafted from hand-foraged botanicals and sugar from UK sugar beets.
The collection of five distinctive syrups – Scots Pine, Gorse, Honeysuckle, Rosebay and the premium fermented Scots Pine Mugolio – offers a versatile boost of flavour for cocktails, mocktails and desserts.
Highland Boundary founder, Marian Bruce, said:
“We want everyone to enjoy the beautiful, delicious botanicals we forage around our distillery, so we’ve created non-alcoholic syrups perfect for cocktails, mocktails and desserts.
“Our Scots Pine Wild Botanic Syrup is made with Scotland’s national tree, bringing a really surprising creamy, toffee-apple, vanilla and lightly smoky flavour with a hint of citrus. The vibrant yellow petals of wild gorse bring a unique marzipan-like flavour with a hint of fresh meadow in our Gorse Wild Botanical Syrup. And the exotic petals from this gorgeous flowering wild climber bring a rich, heady and full floral flavour with an essence of honey to our Honeysuckle Wild Botanical Syrup. The striking purple-pink Rosebay petals create a remarkable wild floral taste close to pomegranate in our Rosebay Wild Botanical Syrup.”
“We’re particularly excited about our Scots Pine Mugolio – Scotland’s first ever Mugolio. Made with hand-foraged cones from our iconic national tree, it’s fermented and aged for over a year to create a truly exceptional syrup with intense, deep, smoky and citrus flavours and a rich, natural dark golden auburn colour.” Mugolio is the perfect partner to make the ultimate Old Fashioned cocktail along with Highland Boundary Wild Cocktail Bitters. Scotch whisky and wild Scottish flavours in perfect harmony. Highland Boundary
