Thai Spiced Roast Chicken

Ingredients
  

  • 2 stalks Lemongrass
  • 1 small Onion
  • 8 Garlic cloves
  • 1 tablespoon Brown Sugar
  • 1 teaspoon Fish Sauce
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Black Pepper
  • Bunch of Coriander

Instructions
 

  • Preheat the over to 175C / Gas 3.
  • Add ingredients to a blender.
  • Blend until a paste forms.
  • Place chicken thighs into a large bowl or a tub.
  • Add paste to the bowl, or tub, and mix throughout ensuring that all the chicken thighs are coated.
  • Cover the bowl, or place lid onto tub.
  • Place into fridge overnight if possible.
  • Take out the bowl, or tub from the fridge.
  • Place chicken things onto a baking tray which also has a rack on it (I used a grill tray).
  • Ensure that the paste is fully coating the chicken, adding any paste that remains in the bowl, or tub, onto the chicken thighs.
  • Place into the oven for 40 - 45 mins.
  • Then turn the oven up to 220C / Gas 5 for 10 mins.
  • Remove chicken thighs from the oven and serve.
  • Delcious with Thai dipping sauce and some fresh coriander.
