Recipe: Watermelon Soup with Fresh Mint

Ingredients
  

  • 1 average sized seedless watermelon
  • 2 tablespoons of lemon juice
  • 2 tablespoons of lime juice
  • 1 tablespoon of fresh mint chopped
  • 1 tablespoon of honey
  • 1/4 teaspoon of ginger

Instructions
 

  • Add watermelon, lemon juice, lime juice, chopped mint, honey and ginger into a blender or food processor.
  • Blitz until smooth.
  • Cover and chill until cold.
  • Once chilled serve in bowls or glasses and garnish with mint.
