Easy Potato and Parsnip Soup Recipe

Easy and simple to make soup for days when you need a warm hug

Ingredients
  

  • 1 tablespoon olive oil
  • 2 large onions finely diced
  • 500 g parsnips peeled and cut into small chunks
  • 500 g potatos peeled and cut into small chunks.
  • 2 cloves garlic grated
  • 1 litre vegetable stock
  • 1 tablespoon rosemary
  • 2 teaspoons of thyme

Instructions
 

  • Place the olive oil and diced onions in a large saucepan and gently fry the onions until softened.
  • Add the parsnips and cook until the parsnips are lightly coloured, this will give a delish flavour.
  • Add the potatoes, garlic and herbs.  Mix thoroughly and cook for another couple of minutes.
  • Add the vegetable stock to the saucepan and bring to the boil.
  • Once boiled, turn the heat down and let it simmer until the vegetables are tender.
  • Blitz the soup until smooth, remember it is very hot, so take care.
  • Serve with some crusty bread for a perfect warming lunch.
