Easy Potato and Parsnip Soup Recipe
Easy and simple to make soup for days when you need a warm hug

Ingredients

tablespoon
olive oil

large onions
finely diced
500
g
parsnips
peeled and cut into small chunks
500
g
potatos
peeled and cut into small chunks.

cloves
garlic
grated
1
litre vegetable stock
1
tablespoon
rosemary
2
teaspoons
of thyme
Instructions
Place the olive oil and diced onions in a large saucepan and gently fry the onions until softened.
Add the parsnips and cook until the parsnips are lightly coloured, this will give a delish flavour.
Add the potatoes, garlic and herbs. Mix thoroughly and cook for another couple of minutes.
Add the vegetable stock to the saucepan and bring to the boil.
Once boiled, turn the heat down and let it simmer until the vegetables are tender.
Blitz the soup until smooth, remember it is very hot, so take care.
Serve with some crusty bread for a perfect warming lunch.
