Broccoli and Blue Cheese Tart

Quick and easy lunch or lighter dinner

Ingredients
  

  • 1 x 375g pack ready-rolled puff pastry
  • 200 g Tenderstem broccoli
  • 250 g cream cheese
  • 125 g blue cheese we used Cambozola.

Instructions
 

  • Preheat your oven to 220°C, fan 200°C, gas 7.
  • Unroll the pastry sheet, keeping the paper on, onto a baking tray.(leaving it on its paper)
  • Score a border around the edge.
  • Using a fork, prick within the border randomly.
  • Bake the pastry for 15 minutes until golden.
  • Press the middle of the pastry down gently to flatten the centre.
  • Simmer the broccoli in boiling water until just tender.
  • Drain, pat dry and put aside.
  • In a bowl, mix together the cream cheese and Cambozola.
  • Spread the cheese mixture within the border of the tart.
  • Place the broccoli over the cheese mixture.
  • Bake for 10 minutes until the cheese has melted and the pastry is crispy.
