Autumn Stew
Autumn Stew with tomato, merguez sausage and beans

Ingredients
Oil for frying

merguez sausages
roughly chopped into chunks.

onion
finely chopped
1
garlic clove
crushed
1
red pepper
sliced

plum tomatoes
quartered
200
ml
chicken stock
2
x 400g tins beans
your preferred type be they butter, cannellini etc, drained and rinsed.
Salt and pepper for seasoning
Instructions
Heat the oil in a large pan on a high heat.
Add the sausages and fry until browned and beginning to crisp.
Transfer the sausages to a plate.
Lower the heat to medium and add the chopped onion. Fry until softened.
After a couple of minutes add the crushed garlic, then add the sliced peppers. Cook for around 2 mins.
Add the tinned tomatoes and stock, bring the mixture to a simmer.
Season, then simmer for 5 minutes.
Add your beans and sausages to the pan.
Simmer for around 10 minutes until the sauce has thickened.
