Line 2 large baking trays with parchment
In a large bowl put butter and caster sugar and cream together.
Mix in the cream cheese followed by plain flour and bring together to form a soft ball dough.
Divide and roll into 20 balls.
Space them out onto the baking trays
Press lightly with the palm of your hand to flatten slightly.
Use your thumb to make a dip in the centre of each, chill the biscuits for 15 minutes
Preheat the oven to 180C, Gas mark 4.
Bake for 20-25 minutes until pale golden.
Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely
Once cool, fill the dip in each cookie with lemon curd and dust with a little icing sugar
