Lemon Curd Cookies

Ingredients
  

  • 50 g butter softened
  • 100 g caster sugar
  • 200 g cream cheese
  • 300 g plain flour
  • Lemon curd
  • Icing sugar dusting

Instructions
 

  • Line 2 large baking trays with parchment
  • In a large bowl put butter and caster sugar and cream together.
  • Mix in the cream cheese followed by plain flour and bring together to form a soft ball dough.
  • Divide and roll into 20 balls.
  • Space them out onto the baking trays
  • Press lightly with the palm of your hand to flatten slightly.
  • Use your thumb to make a dip in the centre of each, chill the biscuits for 15 minutes
  • Preheat the oven to 180C, Gas mark 4.
  • Bake for 20-25 minutes until pale golden.
  • Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely
  • Once cool, fill the dip in each cookie with lemon curd and dust with a little icing sugar
