Recipe: Winter Warmer Soup – Beetroot, Carrot and Ginger

Ingredients
  

  • 1 large onion chopped
  • 3 medium beetroot peeled & diced
  • 2 large carrots diced
  • 25 g fresh ginger peeled & grated
  • juice of 1 orange
  • 1.2 l veg stock

Instructions
 

  • Heat one tablespoon of oil in a pan.
  • Add onion and fry until soft.
  • Add the beetroot, carrot and ginger.
  • Stir.
  • Add the orange juice and stock.
  • Season with salt and pepper.
  • Bring to the boil and then simmer.
  • Reduce the heat and simmer until the veg is tender.
  • Blend until smooth.
  • Serve
