Easy and Quick Meatball Pasta

  • 6 plump pork sausages
  • olive oil
  • 1 onion finely chopped
  • 1 tablespoon oregano
  • 2 garlic cloves finely chopped
  • 250 g fresh tomatoes quartered.
  • 1 tablespoon tomato paste
  • 400 g pasta - we used penne


  • Cook the pasta according to instructions.
  • Squeeze the meat from the sausage skins, and place the sausage meat into a bowl,
  • Mix together the sausage meat with oregano and one clove of chopped garlic.
  • Roll the sausage meat into walnut-sized balls.
  • Heat some oil in a frying pan over medium heat and cook the meatballs until golden.
  • Remove the meatballs and set aside.
  • Add chopped onion and the other chopped garlic clove to the pan and cook until softened.
  • Add chopped tomatoes, tomato purée and enough water from the cooked pasta to make a sauce.
  • Cook on a simmer for 5 mins.
  • Add the meatballs and cook for a further 5 mins.
  • Add the cooked pasta to the pot and stir through.
  • Divide among bowls and scatter with basil and parmesan.
