fried halloumi with vinaigrette

zesty lime and coriander coated fried halloumi perfect light lunch

Ingredients
  

  • Cheese
  • 1 pack of halloumi cheese
  • 2 tablespoons olive oil
  • 2 level tablespoons well-seasoned flour
  • Dressing
  • juice of 1 lime
  • 1 tablespoon capers
  • 1 tablespoon white wine vinegar
  • 1 clove garlic finely chopped
  • 1 teaspoon wholegrain mustard
  • 1 level tablespoon chopped fresh coriander leaves
  • 2 tablespoons extra virgin olive oil
  • Decoration
  • salt and black pepper
  • few sprigs coriander

Instructions
 

  • Unwrap and drain halloumi cheese.
  • Then slice the halloumi and set aside.
  • Add all the dressing ingredients to a bowl and whisk together.
  • Heat oil in a frying pan over medium heat.
  • Coat the sliced halloumi in seasoned flour on both sides.
  • Add to your hot frying pan and cook until golden.
  • Place onto a warmed plate and drizzle with dressing.
  • Add some sprigs of coriander for some oomph.
  • Eat!
