fried halloumi with vinaigrette
zesty lime and coriander coated fried halloumi perfect light lunch
- Cheese
- 1 pack of halloumi cheese
- 2 tablespoons olive oil
- 2 level tablespoons well-seasoned flour
- Dressing
- juice of 1 lime
- 1 tablespoon capers
- 1 tablespoon white wine vinegar
- 1 clove garlic finely chopped
- 1 teaspoon wholegrain mustard
- 1 level tablespoon chopped fresh coriander leaves
- 2 tablespoons extra virgin olive oil
- Decoration
- salt and black pepper
- few sprigs coriander
Unwrap and drain halloumi cheese.
Then slice the halloumi and set aside.
Add all the dressing ingredients to a bowl and whisk together.
Heat oil in a frying pan over medium heat.
Coat the sliced halloumi in seasoned flour on both sides.
Add to your hot frying pan and cook until golden.
Place onto a warmed plate and drizzle with dressing.
Add some sprigs of coriander for some oomph.
Eat!
