Recipe : Lavender Heart Biscuits

Ingredients
  

  • 100 g good quality butter slightly softened
  • 75 g caster sugar
  • 175 g plain flour sifted
  • lemon zest from a small lemon
  • 2 tsp dried lavender
  • 2 drops vanilla essence

Instructions
 

  • Line a baking tray with parchment paper.
  • Place the butter, caster sugar and lemon zest in a large bowl. Using a wooden spoon cream the butter and sugar together until the ingredients are light and fluffy.
  • Gradually add the sifted plain flour and continue to mix until the ingredients turn into a ball.
  • Turn out onto a lightly-floured board and roll out the dough to a medium thickness (about 1cm).
  • Cut the dough into biscuit shapes with your choice of cutter. This is where you can have real fun with different shaped cutters!
  • Place biscuits on parchment-lined baking tray and bake in a medium pre-heated oven at 180 degrees for 10-12 minutes (keep an eye on the timings as the biscuits can overcook very easily).
  • Then relax and enjoy the delicious flavours of lavender biscuits with a refreshing cup of tea.
