Recipe: Cheesy Leftover Mashed Potato Waffles

Ingredients
  

  • 1 pack Scotty Branch Cheddar Mash 400g of mashed potato
  • 30 g panko crumbs
  • 50 g grated cheddar cheese
  • 5 Spring Onions
  • 2 eggs lightly beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 tablespoon chopped fresh chives
  • sour cream

Instructions
 

  • Preheat waffle maker and grease with cooking spray.
  • Combine all of the ingredients, except for the sour cream, in a large mixing bowl.
  • Add around a heaped tablespoon of mixture to each waffle iron.
  • Cook until brown on top.
  • Remove from waffle maker and top with some cheese.
  • Repeat with the remaining batter.
  • Serve the potato waffles with sour cream and fresh chives.
  • Mr Foodie added some crispy onions as well for extra onion-ness
