Recipe: Baby Gem Potato and leek tortilla

Ingredients
  

  • 1 tsp olive oil
  • 1/2 leek chopped
  • Handful of British Gems Potatoes sliced
  • 2 eggs beaten
  • Handful of fresh basil leaves

Instructions
 

  • Heat the olive oil in a frying pan.
  • Add the potatoes and leeks sauté them until they are soft.
  • Add the eggs and basil.
  • Stir around the pan until the eggs begin to set.
  • Turn the tortilla over and cook until cooked through.
  • Eat!
