Recipe: Melon, Lemon and Thyme Salad

Ingredients
  

  • 1/2 Honeydew melon
  • 1/2 Galia melon - or two types of any melon you have.
  • 1 1/2 teaspoons fresh thyme leaves
  • 1 teaspoon 5ml floral liqueur, such as elderflower liqueur or cider or rose wine
  • 1 teaspoon 5ml lemon juice

Instructions
 

  • Toss the chopped melon, thyme, liqueur, and lemon together in a medium bowl.
  • Cover the bowl and and refrigerate for at least an hour.
  • Stir the salad again.
  • Serve on top of ricotta as a refreshing starter.
