Courgette Tea Loaf

Ingredients
  

  • 2 large eggs
  • 85 g soft brown sugar
  • 350 g courgettes grated
  • 1 tsp vanilla extract
  • 300 g plain flour
  • 2 tsp cinnamon
  • ½ tsp bicarbonate of soda
  • ½ tsp baking powder
  • 85 g walnuts roughly chopped
  • 140 g sultanas

Instructions
 

  • Heat oven to 180C/160C fan/gas 4.
  • Butter a 2lb loaf tin.
  • In a large bowl, whisk the eggs and sugar.
  • Add the courgettes and vanilla.
  • Add the remaining ingredients and mix.
  • Pour into the tin.
  • Bake for 1 hr, or until a skewer inserted into the centre comes out clean.
