Spinach waffles

Brunch at home with these spinach waffles

Waffles are a classic breakfast.  We are trying to increase our veggie intake and thought we’d give adding some spinach to waffle batter to try and make this decadent brunch staple healthier. So give these spinach waffles a try and feel like you are eating out at your local brunch cafe.

Spinach waffles

Ingredients

150g flour
1 teaspoon baking powder
1 large free-range egg
240 ml semi-skimmed milk
100g Spinach

Method

Switch on waffle maker.
Into a food blender, place spinach, milk and egg.
Blitz until smooth.
Add flour and baking powder.
Blitz until mixed.
Add batter to waffle maker and cook.

Top with whatever you like from smoked salmon to avocados or fried egg and bacon.
