This is the perfect masterclass for meat-lovers who want to take their knowledge and understanding to the next level. Neil Forbes of Café St Honoré and Sascha Grierson of Grierson Organic will lead you on a journey to explore the ‘fifth quarter’, more commonly referred to as offal, showing you what to buy and how to cook with ingredients that are generally overlooked in home-cooking.

Once a staple of the British diet, offal has seen a slight resurgence on restaurant menus in recent years, yet few of us know what to do with tongue, suet or oxtail at home. Fifth quarter cuts are cheap, readily available, and most importantly, very tasty – so let us teach you how to introduce them into your kitchen repertoire.

There will be tastings throughout the class, as well as opportunities to ask questions.

Café St Honoré and Grierson Organic work closely with Slow Food Edinburgh to help promote ‘a better way to eat’ – food that is good, clean and fair. *£2.50 from every ticket will go to supporting a Scottish delegation to Terra Madre in Turin in October, where thousands of Slow Food producers, chefs, farmers, activists and food communities from all across the world draws close to 250,000 visitors over four days – showcasing national food cultures and produce.

We have a wide range of judging experience covering products, hotels and have judged, for example, for Great Taste Awards and Scottish Baker of the Year.

Along the way Mark gained WSET Level 2 in Wine and I have WSET Level 2 in Spirits as well as picking up an award with The Scotsman Food and Drink Awards.
