No mayo potato salad

Looking for a potato salad that doesn’t come loaded with mayo? Then this Greek style potato salad is for you.  Crisp red onion, gherkins, dill and parsley add lots of flavour. I used gherkins instead of capers as I had them in the cupboard.  Both go very well with this dish.

Ingredients

900g new potatoes ( I used Ayrshire)
200g feta cheese
2tbsp mini cornichions chopped (or to your own taste)
1 red onion finely sliced
1/2 lemon juices
2 tbsp chopped dill
1 tbsp chopped parsley
3-5 tbsp extra virgin olive oil
salt and freshly ground pepper to season
lemon wedges to serve

Greek potato salad recipe

Method

Bring a large pot of water to the boil.
Add the potatoes and lower heat to a simmer.
Cover the pot and cook until tender.
Spread the potatoes out on a plate.
Leave potatoes to cool.
Scatter the gherkins ( or capers), crumbles feta and red onion over the potatoes.
Mix together lemon juice and olive oil.
Add herbs.
Drizzle mixture over potatoes.
Season with salt and pepper to taste.
