Perfect for an afternoon get together with friends

It’s courgette season so you might be lucky enough to find courgettes cheap in the supermarket.   One way of using them is in cake!  You wouldn’t bat an eyelid at carrot cake so why not try courgette cake too?  For a green vegetable it’s maybe not the most obvious of uses but this moist and sweet vegetable is perfect for adding fibre to your diet and you won’t even notice it!  So relax if you think this will taste like a low-fat healthy cake, and read on if you want to try making one yourself.

Courgettes are easy to grow in the garden, I’ve also read that you can grow them in pots, just make sure you have enough room for the roots to wander.  The flowers of courgettes are delicious as well. However, cakes are the way to Mr Foodie’s heart so a courgette tea loaf was made for his favourite time of day – cuppa time!

Courgette tea loaf recipe

Ingredients

2 large eggs
85g soft brown sugar
350g courgettes  grated
1 tsp vanilla extract
300g plain flour
2 tsp cinnamon
½ tsp bicarbonate of soda
½ tsp baking powder
85g walnuts roughly chopped
140g sultanas / raisins

Method

Heat oven to 180C/160C fan/gas 4.
Butter a 2lb loaf tin.
In a large bowl, whisk the eggs and sugar.
Then add the courgettes and vanilla.
Add the remaining ingredients.
Pour into the tin.
Bake for 1 hr, or until a skewer inserted into the centre comes out clean.

  • Add the courgettes and vanilla.
  • Add the remaining ingredients and mix.
  • Pour into the tin.
  • Bake for 1 hr, or until a skewer inserted into the centre comes out clean.
