Recipe – Corn Paletas

Corn paletas recipe

Ingredients

4 ears of corn
8 fl oz  milk
4 oz sugar
8 fl oz of single cream
pinch salt
½ teaspoon vanilla

What to do!

1. Strip the corn and remove all the stringy bits.   Remove the kernals.  Take the corn centres and  break into 3-4 pieces .

2. Put the corn, the core bits, milk and sugar in a medium saucepan over moderate heat and cook, stirring once in a while, until the corn is tender . Cover and steep for 20-30 minutes  to get as much flavour as you can.

3. Strain the corn and throw away the corn centres.  Blend about 2/3 of the kernels with the milk.  Stir in the cream,  salt, and vanilla, and chill completely.

4. Pour the mixture into moulds, leaving a bit of room at the top as it expands.

5.  Freeze

6.  Once frozen remove from the freezer and enjoy!

    When you say blend 2/3 kernels with cream,do you mean in a blender? The rest of the corn gets thrown out?

      yes, in a blender. Keep the corn kernals to use in something else. I found using all the kernals a bit too corny in taste.
