Recipe: Arbroath Smokie Brunch

The Arbroath smokie business has flourished since it was awarded PGI (protected geographical indication) status in 2004. Which means only smokies produced in a ten mile radius of Arbroath can be called real Arbroath Smokies. Buy some real smokies and enjoy a good breakfast.

Recipe: Arbroath Smokie Brunch

Ingredients
  

  • 1 Arbroath Smokie
  • 1 knob of butter

Instructions
 

  • Split the smokie so it lies opened.
  • Add the butter to the fish, dotting over the fleshy side.
  • Cook under a hot grill for 2-3 mins until butter has soaked the fish and is bubbling.
  • Serve with or without a freshly poached egg.
