Halloween spooky crumpets and baked brains

I’m a HUGE Halloween fan. Any excuse not to do any housework to encourage those cobwebs! Pumpkins, dooking for apples, spooky decorations and of course dressing up (eh Mr Foodie?) makes Halloween a lot of fun.

It needen’t be all sweet and sickly treats. Have a spooky breakfast with some pumpkin crumpets from Morrison’s served with some baked brains (baked eggs).

Add some ketchup instead of chilli flakes for a milder taste.

Halloween baked brains and crumpets baked eggs recipe

Ingredients
vegetable oil
4 large eggs
Salt
Black pepper
8 cherry tomatoes
50g cheese
Chilli flakes

Method
Preheat the oven to full.
Grease 2 ovenproof ramekins with oil.
Prepare tomatoes and cheese
Add filling into the ramekins.
Add 2 cracked open eggs to each ramekin.
Season with salt and pepper.
Place in the hot oven for up to 10 mins.
Whilst cooking, toast crumpets ready for serving.
Eat right away whilst toasty hot.
