Perfect fluffy French toast for brunch

French toast is an indulgent treat perfect for a weekend brunch, Mother’s Day breakfast or any time really! The bread, usually brioche, is dipped in a mixture of eggs, milk, cinnamon, vanilla and sugar then fried to a deep golden colour. It shouldn’t be soggy bread but rather fluffy inside and chewy outside.

Ingredients

30g flour
200ml milk milk
3 eggs
1/2 tsp ground cinnamon
1 tsp vanilla extract
1 tblsp white sugar
Thick sliced bread – we used an Italian Bread.

Method

Measure flour into a large mixing bowl.
Slowly whisk in the milk.
Whisk in the eggs, cinnamon, vanilla extract and sugar until smooth.
Heat a lightly oiled griddle or frying pan over medium heat.
Soak bread slices in mixture until saturated. Cook bread on each side until golden brown.
Top with fruit, nuts, chocolate, whatever you prefer. In our example we used Greek yogurt and slices of kiwi fruit and banana.
Serve.
Munch.

  • Soak bread slices in mixture until saturated. Cook bread on each side until golden brown.
  • Serve.
