Recipe – Flour Free Breakfast Muffins

Quick and simple snacks for breakfast on the go.  You can stick anything that you like into them.  Keep some in the fridge and freeze the rest.  This is pretty much as throw it together and see what happens recipe.  Use whatever you have in the fridge to make a tasty brekkie.

Ingredients

4 eggs
Cheese
Cherry tomatoes
Spring Onions
Black Pudding
Seasoning

Method

Whisk together 4 eggs and seasoning until combined.
Add broken pieces of as much of each ingredient as you wish and top up with the egg mixture.
Cook in a medium-hot (about 160°C) oven until brown.
You can add more veggies, more meat, more cheese, the list is endless.
