Easter Egg Cheesecake Recipe

Creme egg fans are in for a treat

Chocolate, cheesecake, gooey Creme egg, personalised toppings and icing. This is a no-bake cheesecake that is cheap and easy to make, using a 99p Cadbury Creme Medium Easter Egg from Lidl as a shell, filled with crushed shortbread, cheesecake and then topped with some fabulous Easter goodies.

We used shortbread for the base as we had plenty left after Christmas but you could also use Lotus biscoff biscuits, digestives or really any biscuits you like.  Crush them and mix in some melted butter to make your own cheesecake base.

Here’s how to make an Easter egg cheesecake

Ingredients

1 milk chocolate Easter egg halved
15g butter
85g biscuits, crushed
200g cream cheese
100g icing sugar
Any other small chocolates for the topping
Readymade icing kit from Lidl

Instructions

Carefully cut the Easter Egg in half. This was easy to do with a Cadbury Creme Egg Easter Egg as the shell was already split at the seam
If your egg isn’t already split, then run a sharp, warmed knife along the seamline scoring it until the shell splits.
Crush your chosen biscuits with a rolling pin or in a food processor.
Melt the butter and add the crushed biscuits to the melted butter.
Mix until all the butter is absorbed.
Spoon the biscuit mix into the bottom of the egg halves gently, like so:

Place the eggs into your fridge to chill.
In a bowl add the cream cheese and icing sugar.
Whisk thoroughly.
Spoon the cheesecake filling carefully into the egg.

Then decorate with your chosen toppings – we used the Creme egg that came with our egg, plus Cadbury Mini Creme Eggs and Kit Kat Mini Bunny pieces. Next time we will try with regular mini eggs. All of these are only 99p each in Lidl as well. Drizzle with readymade icing, again purchased in Lidl, before placing in the fridge for at least 2 hours to set.
