Recipe: Peanut Butter and Banana Quesadillas

Panini grill peanut butter banana quesadilla recipe

I’m always looking for something to nibble on that doesn’t take forever to make and this quick semi-healthy dessert/snack/indulgence suits me well as the recipe has all my favourite ingredients – carbs, fat and sugar! Or as they are usually known: wheat tortilla, peanut butter and banana. All heated up so warm and gooey and mmmmm…

Add some extras such as chocolate chips, or cinnamon or what about drizzled honey? The combinations are endless.

Start off by pre-heating your grill.  Then grab a tortilla and speed about a tablespoon of peanut butter all over it.  Resist the temptation to eat it now!  Then add chopped banana (I used a small one). Place the chopped banana pieces onto the one side of the tortilla.

Fold the tortilla in half and place onto the heated grill.  Cover and cook until the tortilla is crisped to your liking.  Cut and serve. It’s that simple.
